Cinnamon and Nutmeg Quinoa for Breakfast


If you are anything like I am then you do not have a lot of time to eat breakfast in the mornings. I used to heat up a bowl of instant oatmeal or even grab an oats and honey granola bar on my way out the door. However now I can make my morning tasty, nutritious and filling with quinoa. Make up a pot of this tasty breakfast blend the night before and eat it all week long, or serve your family a great and healthy breakfast that will keep them full and happy until lunch. Here is the yummy recipe for cinnamon and nutmeg quinoa breakfast:


1 Cup Quinoa

1 3/4 Cups Water

2 Cinnamon Sticks

1/8 Teaspoon Nutmeg

Dash of salt



Soy, Coconut, or Almond Milk

Maple Syrup

Fresh or Dried Fruit

Brown Sugar



Rinse the quinoa well before cooking. Place all ingredients in a heavy duty pot. Bring to a boil on medium-high heat and then reduce to a simmer, cover tightly, and cook for 20 minutes. You can also use a rice cooker and cook it just like you would white rice.

When the time is up, remove from heat and let it cool for at least five minutes before serving. Remove the cinnamon sticks and serve with the optional toppings for the best flavor combinations!

I love to eat mine with a splash of vanilla soy milk, a smidgen of real maple syrup, and some fresh raspberries. Yum! It is also great with a sprinkle of brown sugar if you don’t have (or like) maple syrup.
